Add butter, cottage roll fat/meat, milk, salt, baking powder, and 1 cup of flour to a mixing bowl and mix well.
Add the cheese and the rest of the flour and combine. The mixture should be moist but not sticking to your hands. Add a bit more flour if needed.
On a lightly floured surface roll the biscuit dough out to an inch thick. Use a biscuit cutter and place the biscuits on the baking tray.
Bake for 20-30 mins at 350 degrees, until the bottoms are golden brown.
Notes
You can freeze 1/4 cup portions of the cottage roll meat/fat to use at later dates. Check out the cottage roll broth recipe here! I makes the most delicious vegetable soup and fried rice!
