Cottage Ham and Cheese Biscuits

Cottage roll (sometimes referred to as “cottage ham”) is accompanied by a good amount of fat which I’ve always hated to discard. Waste Not ~ Want Not. Now I don’t have to! My family gobbles up these delicious “ham” and cheese biscuits.
Cottage roll is a delectable meat. Throw it in the crockpot just covered with water and that’s all you need to do. It’s very moist and tender. Check out this post on how to make a delicious Cottage Roll and Broth!
How to Make a Simple, Delicious Cottage Roll and Broth in the Crockpot
Step-By-Step
Step 1: Preheat the oven to 350 degrees, and gather your ingredients.
Step 2: In a mixing bowl, combine the cottage roll fat/meat pieces, butter, milk, salt, baking powder and half the amount of flour the recipe calls for. Mix well with a mixer, hand mixer or mix well by hand.
Step 3: Add the remaining flour and the cheese. Mix, and knead with your hands until well incorporated. The mixture should be moist, but not sticky.
Step 4: On a lightly floured surface roll out the dough to an inch thickness.
Step 5: Cut into rounds and place on baking sheet.
Step 6: Bake at 350 degrees for 20-30 mins until the bottoms are nice and brown and the biscuits are cooked through.

Freezing the fat/meat for later
You can easily freeze 1/2 cup or 1/4 cup amounts of the meat/fat to make these biscuits at a later dates. I have a batch in the oven as I type.

Equipment
- hand mixer or mixer optional
Materials
- 1 3/4 cups flour - divided
- 3/4 cups milk
- 1/4 cup butter
- 1/4 cup cottage roll fat/meat leftovers
- 1 tbs baking powder
- 1/2 tsp salt
- 1 cup shredded cheese
Instructions
- Preheat the oven to 350 degrees
- Add butter, cottage roll fat/meat, milk, salt, baking powder, and 1 cup of flour to a mixing bowl and mix well.
- Add the cheese and the rest of the flour and combine. The mixture should be moist but not sticking to your hands. Add a bit more flour if needed.
- On a lightly floured surface roll the biscuit dough out to an inch thick. Use a biscuit cutter and place the biscuits on the baking tray.
- Bake for 20-30 mins at 350 degrees, until the bottoms are golden brown.
