Fabulous Bread End Biscuits

 

 

 

 

I know what you’re thinking…  you’ve hit another bread end.  Add it to the other bags of bread end rejects on the counter. 

 

Maybe you’re they type of family that just lovingly accepts and eats those ends like regular pieces of bread.  But in my house they are not worthy of being called BREAD.  They are shunned.  It only has ONE good side after all.  And they are thrown to the side like yesterday’s dirty socks…   🤣

 

Okay, that’s a bit dramatic, but honestly I want to pull my hair out sometimes when I see all of the unused bread ends that just pile up on the counter. All the bread bags… 

 

 

 

 

 

BUT NOT NOW!   These biscuits are fluffy, frugal and fabulous!  They remind me of the cheese biscuits you get at Tim Hortons.  Cheese in these biscuits would be amazing. You have to try! 

 

 

Blend up your bread ends in the food processor and keep them in a container.  That way you’ll have them readily available for when you have some time to whip up a batch. 

That’s it.  You don’t have to bake them or dry them out. Just blend them up and they’re ready to use! 

 

 

Sweet or Savory?

Both are fantastic.  The first time I tried this recipe I used 1/2 a cup of sugar and they were too sweet.  1/4 cup for a sweet biscuit was the perfect amount. 

 

If you’re aiming for a savory or cheesy biscuit though use half the amount, only 2 tablespoons of sugar.

 

I’ve tried herbed biscuits, chocolate chip, blueberry. They’re all good.

This recipe qualifies to be part of my frugal living page.  For obvious reasons…  no more wasted bread ends!  We usually do pretty good, but there are the odd ends that end up moldy.  I am hoping this problem will be totally eliminated now that we have a delicious, simple recipe to use them up!

Dariy-Free, Egg-Free, Simple Ingredients 

We eat fairly plain and simple around here.  And that’s a good thing.  Less additives, less preservatives. 

These biscuits are made with bread ends, flour, water, baking powder, olive oil, and salt. Simple.  And needless to say, I was shocked at how perfect they turned out. 

I’m sure you could substitute butter for the olive oil if you wanted.  They may turn out richer. 

 

 

 

 

 

Storing your biscuits

In an air tight container your biscuits will stay fresh for 3-5 days. 

 

The first few times I made these, I waited until they were completely cool before packing them up.  But if you put them in just slightly warm they’ll stay nice and soft on the outside as well, which I prefer.  

 

 

 

 

 

 

Simple to make

 

Preheat your oven to 350 degrees. If you haven’t already, blend up your bread ends in a food processor. 

 

Measure out 2 cups of breadcrumbs into your mixing bowl.  Add 1 cup of water.  Stir and let sit for a minute while you prepare the other ingredients. 

 

Next, dump the rest of the ingredients in, other than the blueberries, chocolate chips, cheese or other add-in you’re planning on using, and mix it up.

 

Now put in your add-in, mix it again and you’re ready to bake.  Drop large spoonful’s of batter onto your baking sheet and bake at 350 degrees until the edges get golden brown and your kitchen smells fantastic.

Fabulous Bread End Biscuits

Never say good-bye to a moldy bread-end again. You'll be excited to make these biscuits every time.
Prep Time 5 minutes
Cook Time 25 minutes
Servings 12

Ingredients
  

  • 2 cups Bread crumbs from fresh blended up bread ends 1/2 batch = 1 cup
  • 1 cup Water 1/2 batch = 1/2 cup
  • 1/4 OR 2 cup/tbs. Sugar - 1/4 cup for a sweet biscuit OR 2 Tbs. for a savory biscuit 1/2 batch = 2Tbs. or 1Tbs.
  • 2 cups Flour 1/2 batch = 1 cup
  • 1/2 cup Olive oil 1/2 batch = 1/4 cup
  • 1 tbs. Baking Powder 1/2 batch = 1/2Tbs.
  • 1 cup An add-in like Chocolate chips, Blueberries, Cheese or Herbs. 1/2 batch = 1/2

Instructions
 

  • Preheat the oven to 350 degrees and get out your cookie sheet or pan.
  • If you haven't already, blend up your bread ends in the food processor.
  • Measure out 2 cups of bread end bread crumbs into your mixing bowl.
  • Add 1 cup of water to the crumbs and mix. Let sit while you prepare the other ingredients.
  • Add all the remaining ingredients except for the add-in (chocolate chips, blueberries etc...) to the mixing bowl. Mix on medium high until all incorporated. Like 10 seconds! Not long 🙂
  • Add your blueberries, or add-in of choice. Mix until just incorporated.
  • Gather a large spoonful of batter and drop onto the pan.
  • Bake until edges are golden brown. Approximately 20-25 minutes.
  • Enjoy!

Notes

 
Store in an airtight container. They should stay good for 3-5 days.
Make some for a neighbor or friend. They make a great gift!
