Banana Foster French Toast Casserole

 

Oh my goodness! 

 

This is might be the best thing I’ve ever made. Even the picky eaters liked it and Banana Foster is an acquired taste for some.  I always feel like we’re eating dessert for breakfast when we make french toast. But this is NEXT LEVEL DESSERT FOR BREAKFAST. With the sweetness of the bananas and richness of the butter baked in… mmmm.  It’s just so good.   

 

It’s also quick and easy to make.  All pantry ingredients.  You just assemble it layer by layer and it only takes about 20-25 mins to cook.

 

Ingredients:

  • Butter – or any butter substitute will work 
  • 5 Ripe Bananas 
  • Brown Sugar
  • Milk or milk substitute 
  • eggs
  • bread cubes 
  • cinnamon 
  • syrup, or icing sugar 

 

Your bananas can be good and ripe.  You can see how ripe the ones I used were at the back of the picture below.  They were certainly past the point where we like to use them for smoothies so I had to think of something else.  Banana bread is delicious, but I’ve made it so often the kids are bored of it.  I really wanted to use our bananas up another way. 

 

 

 

This will serve between 6-10 people depending on your portions.  It’s wonderfully rich so you could expect to serve more than less.

 

Ingredient Substitutes 

I used vegan margarine, and rice milk for ours and it was YUM!  So I’m confident this recipe could be even more YUM if using traditional dairy milk and butter. 

 

Step by Step:

Step 1:  Preheat your oven to 425 degrees and find your 9×13″ pan or casserole dish.  I used a ceramic casserole dish. 

Step 2:  Slice your bananas into 1/8″ rounds and spread them over the bottom of the casserole dish. 

 

 

Step 3:  Sprinkle 3/4 cup of brown sugar over the banana slices.

 

 

Step 4:  Pour 1/2 cup of melted butter over the brown sugar and banana. 

 

 

Step 5:  In a large bowl or measuring cup, pour a cup of milk, and combine with 6 eggs. 

Step 6:  Cut up your bread into 1″ x 1″ cubes until you have 9 cups of bread cubes. 

Step 7:  Put the bread cubes into the milk and egg mixture and turn until all the bread is covered and all the mixture is absorbed. 

Step 8:  Spread the bread cube mixture over the bananas.  

 

 

Step 9:  Bake at 425 degrees for 20-25 minutes or until set.  

Step 10: To serve, flip the slice of french toast casserole over so the banana is on top.  Sprinkle with cinnamon, a splash of syrup and enjoy!

Equipment

  • 9"x13" casserole dish or pan

Ingredients
  

  • 5 ripe bananas
  • 3/4 cup brown sugar
  • 1/2 cup butter
  • 1 cup milk
  • 6 large eggs
  • 9 cups bread cubes
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 425 degrees. Find your 9"x13" casserole dish.
  • Slice bananas into1/8" slices and spread along the bottom of the dish.
  • Sprinkle the 3/4 cup of brown sugar over the bananas.
  • Melt the 1/2 cup of butter, and pour over the brown sugar and bananas.
  • In a large bowl or large measuring cup, add the milk and eggs. Mix well.
  • Prepare the bread cubes by cutting them into 1"x1" cubes. Add the bread cubes to the milk and egg mixtures and turn until combined and the mixture is absorbed.
  • Spread the bread mixture over the banana mixture.
  • Bake at 425 degrees for 20-25 minutes or until set.
  • Plate by flipping a slice of casserole over, so the banana is visible on top. Sprinkle with cinnamon and splash with syrup.
  • Enjoy!
